
If you grind your own meat, or just can’t find gluten-free sausage at your local store easily, this quick and easy recipe is for you. You can use any ground meat for this recipe, but I recommend ground turkey, or ground pork. I have several dishes I use this in, if I post a recipe for those I will link the sausage recipe back to this page.
Making your own sausage is also a great way to decide what flavors you want to incorporate. It is also great for people who need to watch the level of salt they consume (this recipe does contain salt, you can omit it or reduce if you need to). My kids prefer this sausage because it isn’t “spicy” like the gluten-free sausage from the store.

Ingredients
- 2 lbs ground turkey or pork
- 2 tsp kosher salt
- 1/2 Tbs garlic powder
- 2 tsp anise seed
- 1/2 tsp ground white pepper
- 1 tsp thyme leaves
- 1 Tbs dry or chopped fresh sage
- 1 Tbs oil for pan, I prefer olive or avocado oil
steps
- Combine all sausage spices in a small bowl.
- Add oil of your choice to a skillet.
- Add combined sausage spices to the ground meat. ( You can do this in a mixing bowl, or in your oiled skillet with a spatula. I usually just add the meat to the skillet first, then add the sausage spices.)
- Add oil of your choice to a skillet.
- Cook until meat is thoroughly cooked. This will vary by the meat of your choice. Please look up the temperature requirements for the ground meat of your choice.
