
Hi everyone! I hope you had a good week. Today I have an easy recipe for you to try, eggless meatballs. With a bonus recipe for gluten-free breadsticks to go with them. For the eggless meatballs you can use any ground meat you prefer. The recipe calls for ground beef, but I have also used ground turkey.
I typically mix meatballs in my stand mixer to get everything incorporated well, but if you don’t have one you can simply mix them by hand. I’ve found this recipe to work best in the oven, so you can set a timer and walk away, perfect for a busy week night. The recipe I made up does not require eggs, or breadcrumbs. However, you will need gluten-free ground flax seed.
The breadsticks are also quick and easy. The base recipe for them is essentially my biscuit recipe, which I posted previously. However for the breadsticks, we will be adding some herbs and garlic for some flavor. Also, no rolling involved! Mix the dough, form it, and bake.
For these recipes you will need a mixing bowl (or stand mixer), cookie sheets, and parchment paper.
I will separate the recipes below, starting with the meatballs. Enjoy!
eggless meatballs

Ingredients for the eggless meatballs. This calls for beef, but you can use any ground meat. These can be frozen after cooling down from baking, and easily re-heated.
- 1 lb ground beef
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1 Tbs gluten-free ground flax seed
- 1 Tbs olive oil
- Pre-heat oven to 375°F.
- Line a cookie sheet with parchment paper.
- Place all ingredients into a mixing bowl. If you have a stand mixer, I encourage you to use it, it makes a better consistency.
- Combine all ingredients. If using a stand mixer, mix for approximately 2 minutes, or until the ingredients are fully incorporated. If you do not have a stand mixer, I have also mixed these quickly and easily with a fork. Stir all the ingredients with a fork (or utensil of your choice) until all of the meat, flax seed, and spices appear to be combined.
- Use a spoon to gather some of the meat mixture.
- Roll into meatballs in your hand. The size is your choice, obviously if you choose to make larger meatballs this will not make as many. However this recipe can easily be doubled. My meatballs are usually about ping-pong sized and makes approximately 20-24.
- Place the meatballs on your parchment lined cookie sheet.
- Bake for 25 minutes* on the middle rack of your oven.
*The cooking time will be completely dependent on how large you choose to make them, please check to see if they are fully cooked by cutting in half, or using a meat thermometer. The temperature your meatballs will need to reach will be dependent on the meat you choose (ie: beef has a different internal temperature than turkey). You can find internal meat temperatures on the internet if your meat thermometer does not have it labeled.
Gluten-free breadsticks

These are so quick and easy. I did bake these a different night than I baked the meatballs, so I baked these on 350°F. If you bake them the same night you bake meatballs, you can still put them in at 375°F for less time.
- 2 cups gluten-free measure for measure flour
- 1tsp baking powder
- 1tsp baking soda
- 1tsp dried oregano
- 1tsp garlic powder
- Juice from 1/2 a lemon
- 1 cup warm water
- Pre-heat to 350°F (unless you are baking these with the meatballs)
- Line a cookie sheet with parchment paper.
- Combine all dry ingredients.
- Add lemon juice on top of the dry ingredients.
- Stir
- Add one cup warm water.
- Stir all ingredients again until fully incorporated.
- I used about a fork full of dough to form one bread stick.

9. This is a wet dough, so you can start in your hand by making a cylinder-like shape, but you will have-to form the rest of the breadstick shape on the pan.
10. To form a breadstick shape I patted the sides of the cylinder shape, and pulled gently. When it was the length I wanted, I patted the top of the breadstick to flatten it. This could take some practice.

11. Once you have formed all of your, place on the bottom rack of your oven.
12. Bake for 10 min. If you want, you can then remove and brush with olive oil and bake for an additional 5 min. If you don’t want to add olive oil, just let them bake for the full 15 min.
